Delicious Asian style Salad for Any Season and Any Meal!
Ingredients: (may be adjusted as needed)
1 cup dried sprouted bean trio (by Tru Roots)- lentil, adzuki and mung beans
1 cup Brown Rice
2 TBSP sesame oil/ 1 TBSP toasted sesame oil
2 TBSP Tamari sauce
2 TBSP rice wine vinegar
Juice of a Lemon (preferably Myer) or a drop of Young Living's essential oil of Lemon!
1-inch fresh ginger, minced
2-4 cloves of garlic, minced
½ red onion chopped
1 carrot shredded
1 stalk celery, chopped
1 cup of raw green beans, chopped or 1 cup peas
1 cup of your favorite nut- I used pistachios- yummy!
Cook brown rice- cool
While rice is cooking-chop, mince the veggies
In medium saucepan, cover the sprouted beans with water, bring to boil, simmer for 5 minutes, and then let set for 10-15 minutes. Drain and cool.
Mix rice, sprouted beans, veggies, nuts, and all of the other ingredients
Refrigerate overnight- however, you could eat this right away.
